You Are The Apple Of My Pie: Catherine's Cakes & Pies

Lately, the weather has been giving people something to talk about. What with the winds gushing about and temperatures dropping to a cold state of atmosphere, forcing people to put on layers of clothing to keep themselves warm and snug in the middle of January. It has tested my degree of tolerance as to whether or not I could keep up with even colder climates, but I think that my constant quivering and chattering teeth is a testament to my inability to withstand even cooler seasons. However, the change in weather isn't the only thing worth talking about these days. Chito Benito of Catherine's Cakes & Pies and his homemade Apple Pie has just started to make huge waves in the world of desserts. But before reveal more about my newest top pick,  allow me to talk a little bit about how I was able to discover the best apple pie to date.

One of my favorite desserts is apple pie. In fact, it's the first thing I look for while skimming through the menu of restaurants and cafes. I have tried several of the commercially-sold apple pies, but not one has captured the essence of what I believe is the ultimate pie. The lack of palatable apple pie choices led me to making my own version and was nontheless delighted with its outcome. However, I don't always have the leisure of baking my own apple pie, especially when I struck with sudden hankerings for this "best eaten while warm" dessert. Thankfully enough, I was able to chance upon an article on Southern Living Magazine, which featured homebaker Chito Benito and photograph capturing a lovely spread of just some of his desserts such as the Blueberry Cheesecake (this is something I will definitely have to try soon!), Chocolate Cheesecake with Cherry Brandy and Pineapple Streusel Pie. Next thing I new, there was a lovely apple green box sitting on my dining table. Of course, you didn't think I would just let it lay there and torment me with thoughts of layered apples bathed in cinnamon and caramelized sugar enveloped in a crunchy golden brown crust, did you?

Catherine's Cakes & Pies, which was named after Chito's youngest daughter, started with a friendly competition between Chito, his wife and the making of a nutty dessert - the walnut pie, "She made some mistakes in baking and I told her that she should have done it another way. So I made my version and it turned out much better. Seeing the marked improvement, it challenged me to see how much more I can improve it by tweaking the recipe here and there. Then we came up with our very first product  - the walnut pie." It took 4 years in the making as Chito went through a trial and error process, relying on the remarks and judgment made by friends and relatives, who were more than willing to taste test the revised recipes. Because of that, Chito decided to introduce and market his products to the public with a more confident and optimistic state of mind.

What really captured my attention whilst reading the feature on Souther Living Magazine was the epithet "The Best Apple Pie In The South!" Seeing as how I have been quite luckless with my search for the perfect apple pie, I wanted to see for myself if this title stood true to its claim...and it did. Of course, I didn't just randomly wake-up screaming in the middle of the night and arrive at an epiphany. I did what any apple pie lover do - I savored every inch of my slice and ate everything to the last crumb.

There are certain things I considered before I deemed this apple pie the best one I've tasted. First, the crust - I like my crust flaky and sometimes crumbly, crumbly enough for me to feel my teeth making an effort (but not too much) to bite into it. This one had an element of surprise added to its already interesting feel in the mouth - walnuts! There were so many different textures and we're only talking about the crust. It was a delightful mix between crunchy, flaky and crumbly, truly one of the best crusts to enclose a pie with.

Second, the filling. Now, I'm very particular about what goes in between the two layers of crust. Sometimes, the apples are either too chunky, hard, over the top with the sugar content or the mixture itself is runny. This one had a wonderful consistency and was glorious in all aspects. The apple cinnamon and sugar mixture was thick enough to hold its own and you most certainly won't find yourself wishing there was more fruit in this pie as each slice is packed with evenly-sliced apples! My uncle Tony called it "the best apple pie" he's ever tasted compared to all the variants he has tried mainly because it is "not too sweet".

Third, its appearance. Some apple pies look sloppy, others try too hard by masking its taste with different layers of syrup and scoops of ice cream but with minimal flavor beneath it all. With this one is particular, its golden brown exterior, chunks of walnut peaking out on the surface and patches of syrup oozing from gaps in the crust truly spell out the phrase "quintessential homemade apple pie" to me. A great pie not only tastes good, but it also has to be visually appealing.

Four, eating it a la mode. Whenever I eat apple pie, I don't usually top it with ice cream because I do believe that its good on its own as sometimes, it distracts my taste buds (yes, they have a mind of their own too) from appreciating the different flavors crammed into one generous slice. However, I am able to enjoy this both ways. Upon opening a box of Catherine's Apple Pie, you'll see a note stuck to the bottom with instructions on the best way to enjoy it, and that is by warming it in the oven and topping it with a hefty serving of vanilla ice cream scooped atop such a sublime European dessert. Apple pie IS best eaten warm, and a great way to enhance its flavor is by turning it into a dual-temperature treat and pairing it with something cool to create a bit of incongruity.

See what I mean by each slice overflowing with apples? It's almost as if Chito considers  skimping on ingredients a crime.

A lot of detail and structure, I feel, has a lot to do with Chito's Engineering background, "I think my engineering background helps me find out-of-the-box solutions to some baking problems that I encounter. I once thought of a process to improve my lola's karioka recipe. Now, my mother makes it based on my recipe and all our relatives agree that it's much better than before." Although even prior to all of this started, Chito never even had any formal training except for assisiting his sister whenever she baked during his childhood days, "That's all the training I got. She's the one who took formal classes. I had some interest in baking but never really thought of making a career out of it. I was always very meticulous and exact. So my mom always asked me to read the instructions of cooking equipment that she bought and to teach our cook how to use it. I guess all these helps me learn some cooking/baking techniques." I suppose it was only a matter of tap before Chito's innate desire to bake was tapped!

Although there are already so many different versions of apple pie in the market, Chito believes he can make his way through and rise above them all, "It's the people who are looking for the best products and are willing to pay just a little bit more for it. We like to think of ourselves as the "Apple" of apple pies. Apple (Mac) went into the mobile phone business which was already crowded with so many manufacturers. They made an excellent phone which raised the bar so high, that they ended up with no competitors, since no one else was on the same level." That's what we'd like to achieve." I believe this pay is already well on its way to attaining just that and will find itself in the kitchens of all apple-pie enthusiasts! Even those who aren't fans of this fruit-themed dessert will think twice.

Something to look forward to in the future? Chito Benito's take on Banoffee Pie - I am certain this will become another hit. Also, plans of opening a store is in the works but nothing definite at the moment. It's a great way to start the year for Catherine's Cakes & Pastries as they are making its way up the dessert ladder and have already made me a huge fan of their baking. The Day I Won White Chocolate Chunk Macadamia Cookies

One Wednesday evening, as I was browsing my feed on Facebook, one of the updates that caught my attention was a photo of cookie dough with the caption "GUESS THE DOUGH". Along with the photo, it said that whoever could guess the flavor right would win a dozen of them. Now, I normally don't join giveaways, but that night, I felt like throwing in a guess or two for kicks. So, I sent a personal message through the page and typed in my first guess: White Chocolate Chunk Cookies. *BUZZ* I felt like I was in a game show and the buzzer went off cause my answer was missing one more word. And so I gave my second guess: White Chocolate Chunk MACADAMIA Cookies. *DING, DING, DING!* WE HAVE A WINNAH! Okay, maybe there wasn't an imaginary man from an amusement park booth congratulating me like I won a teddy bear from knocking out milk bottles with a ball, but it sure felt like it. I was looking forward to eating my prized cookies (no pun intended) and wondered how I'd get the cookies on a weekday since I stayed in Dasmarinas during school days. Luckily, Claudia, the owner, was within the Alabang area yesterday, so she dropped off the cookies. It was a good way to end the week!

I'm fond of things in the shade of turquoise and when I saw Claudia's label, my psyched-o-meter went up a couple notches.

I've never had a white chocolate chunk cookie, more so a variant with macadamias in it. Normally, I would eat chocolate chip cookies from the supermarket and made a couple of batches myself in the past cause I'm very selective when it comes to choosing the perfect cookie. This, however, is easily my new favorite! It's hard not to take great pleasure in eating Claudia's White Chocolate Chunk Macadamia Cookies when you have a combination of nuts, chocolate, and moist & chewy cookie dough. This is by far, one of the best chocolate chip/chunk cookies I've ever eaten.

Eating one cookie makes me feel like I'm eating four. Seriously. It's jam-packed with macadamia nuts and white chocolate chunks. And when I say chunks, I mean, CHUNKS! I love homemade cookies, especially when they're thick, bulky and chewy! Claudia definitely doesn't skimp on the amount of nuts and chocolate she puts into the batter and the same goes for the proportions of the cookies. I like irregularly sized cookies more than perfectly shaped ones as it adds rustic overtone to it.

Imagine yourself eating a bowl of these chewy yummies with a tall glass of cold milk. It's the perfect way to spend your Saturday.

I couldn't create a cookie tower with more than 3 pieces since they were so stocky. Nonetheless, I would down this edible edifice any day of the week.

The dough may seem slightly undone, but that's part of the cookie's charm. It's a mix between gooey, chewy and crunchy.

Rhum Cake by Sidney Bascon: The Good Kind of Overdose

Ahhh, rum cake -  a traditional holiday dessert that was brought into this wonderful world thanks to English settlers. Way back when it was first introduced, dried fruit was soaked in rum for several days then added to the dough to be baked. I'm guessing that this was how rum cake's darker and heavier counterpart, fruit cake, came to be. However, Sidney Bascon of Simply Pastries by Sidney, once again delights with her own version of the time-honored cake. The Rhum Cake Loaf is actually one of Sidney's bestsellers on her dessert menu. In fact, it's so popular that she marked today as having baked her 200th loaf since Christmas.

I am a lover of unpretentious and simple desserts, such as this cake which has a no-frills touch to it, yet is able to pack in a kick somehow. That is definitely the doing of the rum mixed into the batter.

Before my aunt even slices this half-loaf, half-cake creation for everyone in my family to try, I look very carefully at its exterior and admire how its edges and sides were perfectly baked to a golden brown color. Don't let its homespun appearance fool you though. It's what's inside the cake that holds a surprise.

Notice how the lined cracks on top of the cake resemble a lovely stream? In lieu of water, there are traces of rum glaze that was drizzled on the cake to give it that extra glisten.

I've tasted fruit cakes before as well as rum cakes in the past, but most of them were either too dense or overwhelming for my taste. The rum was Since then, I wasn't ever planning on sinking my teeth into cakes that was indistinguishable from the ones I've tried before. Despite that, I made an exception after I had a slice (okay..maybe three) of Sidney's rhum cake. I am reminded of homemade butter cake, which I loved eating as a chunky child. Biting into the buttery slice just sent me off into nirvana. The rum, which is alcoholic liquor distilled from sugar-cane residues, yields an audacious thrill to eating something so delicate and gauzy.

This was my plate and that tiny fork, or as I like to call a "tork", belongs to me. Any body still willing to fight me for this?

Initially, I was worried that I wouldn't be able to relish the taste of the cake because of its rum content. Thankfully enough, it had just enough rum to let consumers experience that extra punch without finding themselves flat on the floor from eating too much of this delectable treat.

You don't have to wait until the next holiday season to enjoy this cake. In fact, it would suit any occasion or family gathering if you're after a modest way to end a meal. Who says you need a bottle of wine and champagne when you have a cake that's luscious, full of flavor and daring all rolled into a loaf of awesome?

Brazo de Mercedes Cheesecake: Sidney Bascon Style

Lately, I've been craving for Brazo de Mercedes cheesecake. It must have been the holiday seasons bringing out the dessert swine in me because every baked dessert I spotted in the house ended up on the palm of my hands and into my mouth. No surprise there. Thankfully enough, Sidney Bascon of Simply Pastries by Sidney had just what I was looking for to satisfy my craving. While browsing through Sidney's extensive selection of cakes and pastries on her Facebook page, I was starting to think that there was absolutely nothing simple about her pastry line-up. She makes everything from cheesecakes in a cup, to dark chocolate chili cake, several flavored loafs, personalized cupcakes, beautifully decorated cakes and even a bouquet of red velvet "roses" (which are actually cupcakes). I was so impressed by her adeptness and was curious as to how she decided to venture into the baking business and Sidney related her story to me, "Simply Pastries by Sidney started last November 2010. I graduated from DLS-CSB last Oct 2010, so while I was trying to find a job within Manila, my mom told me that I should start a baking business first while waiting for some calls or results since Christmas season was a few weeks away. So the next 2 days, I began experimenting and buying some equipments and ingredients for the business. That's how it started." Sidney has been in the business for almost 3 years now and within that time span, it is evident that she has been able to master one craft she is very passionate about.

You'd be surprised to know that Sidney wasn't even interested in baking at first, "I took up BS-Hotel, Restaurant and Institution Management major in Culinary Arts in DLS-CSB. I'm wasn't into baking when I was in college hehehe but when I was 12 years old, I attended baking classes with my mom. Also, after I graduated, I enrolled in Lifestyle Courses at Heny Sison's Culinary School."Despite the success of her pastry line and a feature on GMA News' show News To Go, Sidney doesn't let her triumph get to her head and finds importance in learning new techniques and tips in baking, "..until now, if I have time, I attend classes just to freshen my knowledge in baking or cooking."

It was my first time to try out Sidney's products and her Brazo de Mercedes cheesecake just happened to be one of her best sellers. Other best sellers on her line-up are mostly cheesecakes such as Green Tea White Chocolate Cheesecake and Rum Raisin Walnut Cheesecake as well as Rhum Cake Loaf and Carrot Cake. The meringue was light, fully and airy, almost pillow-like. I liked how it was playfully resting atop the cheesecake in a swirl pattern.

You would think that a brazo de mercedes cheesecake would be too sweet or too overwhelming, but this one in particular made use of an adequate amount of sugar, cream cheese and the meringue adds texture to the cake. My whole family (myself included) enjoyed eating it for dessert after a hearty New Year's day meal. Two of my aunts ate their slice with a hot cup of coffee and thought it was the perfect drink to partner it with!

You can easily distinguish the 4 different layers of the cheesecake - the fluffy meringue, yema, cream cheese cake base and crust. The yema, generously spread beneath the meringue, gave the cake its sweetness and the velvety texture of the cream cheese mixture is what defines cheesecake as rich and luxurious. The cheesecake in itself is light and not cloying at all!

In most of the cheesecakes I've tried, the crust has just a subtle hint of sweetness. However, while chewing a chunk of the cake's edges, I was surprised to find out that it was salty. It was a nice play on the sweet and salty combination and quite frankly a delightful bolt from the blue. Definitely something to bring home to family and a pleasant dessert to serve up.

With over 100 different items on her menu, you might start to wonder what the best cake would be to gift Sidney with on special occasions or when a craving suddenly strikes. Well, Sidney let me in on her top desserts and they are tiramisu, cheesecakes and molten chocolate cake. Reminds me of the chocolate cake that I tried at Chili's. Mmmm.

Sidney's loyal customers and newly-baptized fans have been clamoring for her to open up a shop. There are plans, however, of putting up one in a couple of years, she says that her customers can visit her Facebook page and message their orders for now. Although one thing people can look forward to this year are "more unique, modern and fun flavors of cheesecakes and cakes."

One thing Sidney is proud of is her approach to baking each of the cakes listed on her dessert menu, "I think my style of baking and the uniqueness of the flavors of my cakes or cheesecakes sets me apart from other home bakers. And sometimes, I really don't depend on recipes." I would have to agree, her flavors are unique, diverse and leaves room for more variants to make sure all palettes are satisfied. There truly is nothing Sidney Bascon can't bake!

Petite Is In: The New Glorietta Vibe Race the Runway Fashion Show

I am sure there is a part in all of us that dreams of walking down the runway. When I was 9, I thought I would grow to be as tall as my mum who stands tall at 5'7. However, science and my genetic makeup did not grant my wish to increase in height and I remain dainty and delicate, or as others would like to call it, petite. I have no qualms with my vertical measurement and feel every bit confident walking in either flats or a pair of 5-inch heels, nor do I mind people who tower over me when I cross paths with people who are a lot taller than I am. Ever since I stopped growing, I wasn't really banking on ever modeling on the runway..until my friend Rosy Adriano sent me a text asking if I'd be interested to model for Armani Exchange, as her friend Paola Lai, who is working for the said store, was on the lookout. I thought I was being punked, but at the end of Rosy's message, she included a "this is not a prank! HAHAHA!" as though we were communicating telepathically.

The stint was all for the love of The New Glorietta Vibe Race the Runway Fashion Show, which was a friendly competition with Turkey for having a Guiness World Record for having the most number of models on a runway with a record of 1,967. I thought, "That's easy. Getting 2,500 people to model will instantly render us victorius." But I was wrong, there was a catch. Several criterion had to be followed in order for each model to be counted as part of the line-up: every person who walked the runway had to walk to the beat of the music, carry the clothes wear and be energetic! I guess none of that mattered as much since everyone had a great time fulfilling their dreams of sashaying down the ramp and proof of that was that the Philippines beat the record with an astounding number of 2,255, close to the 2,500 they brought into the event! Congratulations to every one who was a part of this event - we all made fashion history! :)

With my friend Karla Chan before we fought our way through the crowd to get to the registration booth.

Registration bands for Runway 1!

Now off to the fun part - getting hair and make-up done at the Armani Exchange store.

Thank you, Mr. Fabulous Hairstylist for making my hair runway-worthy!

The clothes were basically from the Winter Collection and I was thrilled I got to sport this get-up.

Psyched that I was given this opportunity, this chance to prove that you don't need to be 6 feet tall to wear beautiful clothing. The most important accessories anyone should wear is confidence and a smile.
