In Full Bloom: Joie de Vivre (outfit post)

       Everything is better said in French. Whether it be an expression of joy, amazement, dismay or yearning for food (just like Dexter who uttered nothing but "omelet du fromage" during majority of one episode), the language of love is truly more than just a bunch of complex words that sound like word salad when put together. What about using a phrase in French to name your clothing line? Belle Ortiz of Joie de Vivre had done just that! Joie de Vivre, which translates to "Joy of Life", is an online clothing store that sells youthful and vibrant clothes with a touch of classiness. Founded by two UP Diliman students, their aim is not just to make ladies feel beautiful, but to enhance what they feel is the most important characteristic of a woman - her confidence. Belle conveyed her reason behind the clothing line's name, "I felt that this phrase (joy of life) captured the essence of online shopping, which is to find clothes and accessories that are unique as well as reasonable in terms of price range without having to leave the comfort of your own home. It sort of stimulates the experience of buying in Greenhills or St. Francis Square."


             I had been looking for a bright floral dress months prior to this post, so when I received this beautiful floral dress in the mail, I was delighted to try it on and it fit like a glove! The colors are a  wonderful prelude to the upcoming summer season. 



The neckline, apart from the bright colors, is what gives it a youthful touch.



The cut-out at the back adds boldness to the dress without looking tacky. 







I've worn this dress 3 times already before publishing this post, for obvious reasons. It's easy to wear and I love how light it is!


        I've always been skeptical about online shopping, especially when it comes to clothes. Not being able to fit into the clothes you ordered despite the size chart on display can be frustrating. However, Belle has a more sanguine line of thinking with regards to this, "I find that it's part of the charm of shopping online, much like getting a surprise - you never can tell what you'll get. But you're fortunate if the owner of the store has a knack for estimating your size and is honest enough to tell you it won't fit. Haha." I think Belle just described herself, as she really does have a flair for picking the right size whenever customers place an order.

Hey Cupcake!

        I know, I know. This is my nth post about cupcakes, but what can I say? Cupcakes have been pretty consistent in maintaining its status as "the" dessert to beat at the moment. I noticed how most of the home bakers who make cupcakes are based in Makati or Quezon City, which makes deliveries and pick-ups more complex as I live about an hour or two away from those places, respectively. So, when I found out the Patricia Jose of hey cupcake! was from Alabang, just within my area, I let out a big *PHEW*. While browsing through hey cupcake's Facebook page, I couldn't help but giggle as I read some of the typography photos posted on her timeline about cupcakes such as "Friends are good. Friends are better with cupcakes" and "You can't buy happiness, but you CAN buy cupcakes and that's sort of the same thing". As I looked through the photos of the cupcakes, my eyes widened when I saw variants based on chocolate bars such as Hershey's Milk Chocolate, Hershey's Cookies 'n' Cream, Reese's, Toblerone White, Nutella, Snickers and of course Red Velvet Cupcakes and Chewy Cookies.

            I was able to try the Red Velvet variant, a half-dozen dozen box to be exact. I adore the little red hearts at the tip of the icing on the cupcakes. If Snow White were a cupcake, this would be her. I did say this was a half-dozen box but there are only four in this photograph, yes? Well, there's a story behind that - I usually dorm in-campus during the weekdays and Patricia's cousin was nice enough to give me the cupcakes since we both go to the same school. Late night studying and 8 exams in one week is enough to stimulate my cravings for sweets (I think you know where I'm going with this). I wanted to save all six cupcakes until the end of the week just in time for their "photo op", but alas, not all of them made it home. Anyway, enough of the food drama!


         Cupcake frosting is beginning to make a name for itself - it's a smoother version of whipped sugar and although some may contest that this one was made too sweet, I enjoyed every bit of it! Its "partner", the cake base, complemented the richness of the frosting. Mmm. I tried hard to resist eating all of them in one sitting, but the only thought that kept me from doing just that was me publishing a food feature with no photos - one of my absolute worst nightmares. 


        Patricia started hey cupcake! as soon as she noticed how quickly it was making its way to dessert lovers' "must have" list, "After graduating from college, I observed that cupcakes had become a dessert favorite. So, I tried to come up with flavors that are unique and attractive and offered them initially on a limited scope." She wanted an appealing and catchy name to go with her cupcake line, which captures what one would say as soon they lay their eyes on their favorite cupcake coupled with a loud gasp, of course. 


        Patricia is no stranger to local bazaars. After being a part of COCINA (an event by UP Diliman), Soderno and The Village Bazaar, hey cupcake has garnered a following both from opposite ends of the Metro. This can be attributed to Patricia's burning desire to put up her own business as well as her training, "I've been into baking since my secondary school days. I really wanted to have my own pastry business and so I pursued it after graduating from college. I took up BS Hotel & Restaurant Management and attended baking classes."

The Chocolate Love Affair

         "Love? I'd rather fall in chocolate." Those are strong words to live by, especially when you consider chocolate sufficient enough to "fill the void". I imagine unattached people uttering those words on Valentine's Day to themselves and their peers with functional relationships. I can't blame them. Food is one of the few things that works so easily as a pacifier, especially chocolate in particular. Known as one of the most studied aphrodisiacs there, chocolate soothes more than just our taste buds. However, Christina Erika Jacob, Athena Rafer and Richard Balatan of The Chocolate Love have taken their affair with the famous and well-loved sweet treat a couple notches higher. I let out a giggle when I found out their business was established on Valentine's Day and that it spawned from Christina's intent of getting something for her boyfriend, "We are all HRM students from the University of Perpetual Help System DELTA. It started when I (Ecks) was trying to find the perfect Valentine's gift for Richard. Athena suggested that I should make homemade chocolates. After that, I asked Athena if they could sell chocolates on Valentine's Day too. Richard helped make chocolates after Valentine's Day." And then, The Chocolate Love was born. Everything was just so fitting. 



            The product they started selling first were the customized heart-shaped chocolates. Other sweets like chocolate lollipops, chocolate bars, Chocolate wontons (or "Chocmai" as Richard calls them), cupcakes, Fried Twix and the beloved fried Oreo. Ever since Flaming Wings offered Wicked Oreos (which are deep-fried Oreos topped with ice cream) on their dessert menu, people began making their own at home and see it as a fun activity to do with friends and family. Of course, we all have days when we just wanna plop ourselves on our beds and do nothing but eat, right? Well,  The Chocolate Love team (no, the owners are not made of chocolate) can make your life just a wee bit easier cause they personally deliver your orders.


         I got to try a box with some of their products, mostly composed of the 3 best sellers on their line-up: Fried Marshmallows, Fried Oreos and Cake Pops, along with a Choco and Mallow Pop. They also sell edible cake toppers, Chocolate Covered Potato Chips, Leche Flan and Cakes in a Jar, among other things. These would make great giveaways for parties as they also customize the chocolates they make. Plus, everything is made to order so you're sure to get a fresh batch of sweets.

         Biting into an Oreo is one thing, biting into an Oreo that's covered in pancake batter and deep-fried until golden brown is another story.

       I never thought anyone would try frying a marshmallow given that it's soft, gooey and chewy. The Chocolate Love team added a layer of chocolate as the treat's surprise element. I asked the owners what separates them from other homebakers and they had this to say, "I think it's because we make sure our customers are 1000000000% satisfied. We make sure that our customers are happy with their orders. Last December, I made cake pops so many times, to no avail. But when a customer ordered Christmas-themed Cake Pops, we took it as a challenge and gave our 100% in making it even thought we didn't offer cake pops at that time."

        What is a Cake Pop, you ask? It's basically a small portion of cake with a stick and takes the round shape of a lollipop. I think I would have 10 (or more) of these instead of a huge slice of cake on a day wherein I'd trick myself into thinking I'd be eating less. *teehee*

Cookie Bar Presents: Cookie Cups & Cookie Cake!

                    I love cookies. As a tubby kid, I would overindulge in anything sweet - from cold treats like ice cream to chocolates of all sorts and the occasional gummy bear fix. Despite the countless sugary treats that were out in the market, I always had my heart set on cookies - chocolate chip cookies to be exact. What with its sometimes slightly crooked round shape and chocolate chips (or chunks) folded into the butter-sugar-flour-egg mixture, it has easily become an old-fashioned favorite among both adults and children. Plus, it goes wonderfully with milk, thanks to Oreo's Twist.Lick.Dunk catchphrase and of course, Santa Claus. 

                    These days, however, chocolate chip cookies have figuratively (and perhaps literally) gone under the knife and can now be enjoyed in different sizes and flavors. Wait. Chocolate chip cookies in VARIOUS SIZES AND FLAVORS, you say? How could a harmless treat metamorphose into something even better? Preposterous! Well, that's not what Ivorie Acosta of Cookie Bar thinks. She happens to make cookie cups. You read it right, cookies in the form of cups. I'd like to virtually take off my hat to Ivorie for coming up with a clever and up-to-date way of revamping this timeless treat. When I asked what prompted her to develop such an innovative creation, she had this to say, "Cupcakes have been creating a big storm in the dessert world because of the smalle serving, cute presentation and yummy taste. I see it in bakeries, coffee shops, Sunday markets and food bazaars. But how about everyone's favorite comfort dessert, the cookie? It has been hiding in the shadows of the cupcake and other desserts out there because one, it's not very colorful and two, it's easy to make and reproduce. I love cookies so much that I want to give the cookie a new look and taste so everyone can have a better perception of this delicious dessert." 


         Now, you might be wondering, what exactly is a cookie cup? It's basically chocolate chip cookie dough baked in cupcake tins. I'm starting to think that this is a cross between a cookie and a cupcake as the texture is akin to that of a cake, except that it's softer and chew-tastic! The fun doesn't stop there. Ivorie tops her cookie cups with all sorts of wonderful things such as marshamallows, caramel, chocolate fudge, peanut butter, white chocolate, Hershey's semi-sweet chocolate, Twix, Snickers, Reese's Peanut Butter Cup pieces and of course, chocolate chips.

          The photo above shows an assortment of 10 different cookie cup flavors and believe me, it was tough to choose which to taste first. I'm pretty big on caramel flavored desserts, especially when coupled with chocolate. So you can guess what I chose to gobble up first. The caramel was thin and silky,  almost as if velvet curtains were running down my throat. The next variant I stuffed my face with was the cookie cup with chocolate chip toppings. It was like eating the traditional chocolate chip cookie, only with an incredibly fudgy and smooth consistency. Since I tried the mini cups, I knew that each one would merely be seen as bite-sized pieces. Translation: I had more than one of these. Okay, maybe two. ...or four.


            My younger cousins fancied the Premium Flavored Cookie Cups, which were topped with pieces of Twix, Reese's Peanut Butter Cups, Snicker's and Milky Way. I watched one after the other just disappear from the hands of my "little big cousins" (they're only 16 and 17 years of age and are towering at 5'7, hence the label) into thin air. If you want something gooey to go with the chocolate chip cookie base, go for the marshmallow and chocolate fudge variant. Red Velvet lovers will be pleased to know that Ivorie also offers a cookie cup version of the well-received tinted flavor. To make it even more alluring, each Red Velvet Cookie Cup has cream cheese frosting (with sour cream) piped on top. Hey, if cupcakes can do it, cookies can too!

           Let's not forget that Ivorie also makes a mean Cookie Cake, which is a supersized version of a regular chocolate chip cookie and baked using a cake tin. She describes it as "a thin layer of chocolate fudge in the middle and semi-sweet morsels spread throughout the cake." If you wanna go the extra mile,  add P70 for toasted marshmallows which covers every inch of the cake. When Ivorie handed me this cake, she advised that it is best enjoyed when you pop it into the microwave oven for about 10 seconds. I'm pretty stubborn when it comes to food and I like my cookies (especially 9 inches of it) warm, chewy and fudgy. So I let it sit in the oven for more than 10 seconds and as soon as I sliced through the center of the cake and lifted the knife, it was covered in chocolate. I could tell the chocolate morsels had already softened, or should I say, melted, which is exactly how I prefer to enjoy my cookie cake.


            I asked Ivorie how Cookie Bar came about and began delighting dessert lovers everywhere, "Cookie Bar started as a sideline business since I work as a pre-school teacher during the day. Baking is a relaxing activity for me and I decided to specialize in cookies since it is my favorite type of snack/dessert. I started by experimenting on different recipes and came up with the cookie cup recipe after a lot of trial and error." I suppose Ivorie's playful and high-spirited side translates evidently so in the cookies that she makes, which awakens the inner child in all of us. She also has impressive credentials to boot, "I decided to take baking classes at The Institute of Culinary Education in New York during the summer of 2011. This helped me improve my baking skills and widen my knowledge about the art of baking cookies, cakes and breads."


   Since I wanted to make sure all the positive feedback wouldn't just be streaming down my chocolate-covered face, I asked some of my batchmates from the De La Salle Health & Sciences Insitute to be a part of my taste test team. I know the lighting in the photos are terrible, it was really dark inside our classroom, but I think I was able to capture the satisfied expressions on their faces. Oh and try not to be distracted by the room's state-of-the-art interior. I too am still amazed by it every time I go to school everyday.

           I wish I could have taken a video of each of their reactions when they took a bite of the cake. I saw nothing but beams and some closed their eyes to savor its taste. They were surprised with the cookie's massive size and wanted to know where they could get a giant cookie cake of their own. Most of them delighted in the cake's "not too sweet" taste and how the chocolate was just oozing with such divinity.

You Are The Apple Of My Pie: Catherine's Cakes & Pies

          Lately, the weather has been giving people something to talk about. What with the winds gushing about and temperatures dropping to a cold state of atmosphere, forcing people to put on layers of clothing to keep themselves warm and snug in the middle of January. It has tested my degree of tolerance as to whether or not I could keep up with even colder climates, but I think that my constant quivering and chattering teeth is a testament to my inability to withstand even cooler seasons. However, the change in weather isn't the only thing worth talking about these days. Chito Benito of Catherine's Cakes & Pies and his homemade Apple Pie has just started to make huge waves in the world of desserts. But before reveal more about my newest top pick,  allow me to talk a little bit about how I was able to discover the best apple pie to date.

           One of my favorite desserts is apple pie. In fact, it's the first thing I look for while skimming through the menu of restaurants and cafes. I have tried several of the commercially-sold apple pies, but not one has captured the essence of what I believe is the ultimate pie. The lack of palatable apple pie choices led me to making my own version and was nontheless delighted with its outcome. However, I don't always have the leisure of baking my own apple pie, especially when I struck with sudden hankerings for this "best eaten while warm" dessert. Thankfully enough, I was able to chance upon an article on Southern Living Magazine, which featured homebaker Chito Benito and photograph capturing a lovely spread of just some of his desserts such as the Blueberry Cheesecake (this is something I will definitely have to try soon!), Chocolate Cheesecake with Cherry Brandy and Pineapple Streusel Pie. Next thing I new, there was a lovely apple green box sitting on my dining table. Of course, you didn't think I would just let it lay there and torment me with thoughts of layered apples bathed in cinnamon and caramelized sugar enveloped in a crunchy golden brown crust, did you? 




             Catherine's Cakes & Pies, which was named after Chito's youngest daughter, started with a friendly competition between Chito, his wife and the making of a nutty dessert - the walnut pie, "She made some mistakes in baking and I told her that she should have done it another way. So I made my version and it turned out much better. Seeing the marked improvement, it challenged me to see how much more I can improve it by tweaking the recipe here and there. Then we came up with our very first product  - the walnut pie." It took 4 years in the making as Chito went through a trial and error process, relying on the remarks and judgment made by friends and relatives, who were more than willing to taste test the revised recipes. Because of that, Chito decided to introduce and market his products to the public with a more confident and optimistic state of mind. 

               What really captured my attention whilst reading the feature on Souther Living Magazine was the epithet "The Best Apple Pie In The South!" Seeing as how I have been quite luckless with my search for the perfect apple pie, I wanted to see for myself if this title stood true to its claim...and it did. Of course, I didn't just randomly wake-up screaming in the middle of the night and arrive at an epiphany. I did what any apple pie lover do - I savored every inch of my slice and ate everything to the last crumb.



             There are certain things I considered before I deemed this apple pie the best one I've tasted. First, the crust - I like my crust flaky and sometimes crumbly, crumbly enough for me to feel my teeth making an effort (but not too much) to bite into it. This one had an element of surprise added to its already interesting feel in the mouth - walnuts! There were so many different textures and we're only talking about the crust. It was a delightful mix between crunchy, flaky and crumbly, truly one of the best crusts to enclose a pie with. 


                Second, the filling. Now, I'm very particular about what goes in between the two layers of crust. Sometimes, the apples are either too chunky, hard, over the top with the sugar content or the mixture itself is runny. This one had a wonderful consistency and was glorious in all aspects. The apple cinnamon and sugar mixture was thick enough to hold its own and you most certainly won't find yourself wishing there was more fruit in this pie as each slice is packed with evenly-sliced apples! My uncle Tony called it "the best apple pie" he's ever tasted compared to all the variants he has tried mainly because it is "not too sweet". 


               Third, its appearance. Some apple pies look sloppy, others try too hard by masking its taste with different layers of syrup and scoops of ice cream but with minimal flavor beneath it all. With this one is particular, its golden brown exterior, chunks of walnut peaking out on the surface and patches of syrup oozing from gaps in the crust truly spell out the phrase "quintessential homemade apple pie" to me. A great pie not only tastes good, but it also has to be visually appealing. 


              Four, eating it a la mode. Whenever I eat apple pie, I don't usually top it with ice cream because I do believe that its good on its own as sometimes, it distracts my taste buds (yes, they have a mind of their own too) from appreciating the different flavors crammed into one generous slice. However, I am able to enjoy this both ways. Upon opening a box of Catherine's Apple Pie, you'll see a note stuck to the bottom with instructions on the best way to enjoy it, and that is by warming it in the oven and topping it with a hefty serving of vanilla ice cream scooped atop such a sublime European dessert. Apple pie IS best eaten warm, and a great way to enhance its flavor is by turning it into a dual-temperature treat and pairing it with something cool to create a bit of incongruity.


See what I mean by each slice overflowing with apples? It's almost as if Chito considers  skimping on ingredients a crime. 


            A lot of detail and structure, I feel, has a lot to do with Chito's Engineering background, "I think my engineering background helps me find out-of-the-box solutions to some baking problems that I encounter. I once thought of a process to improve my lola's karioka recipe. Now, my mother makes it based on my recipe and all our relatives agree that it's much better than before." Although even prior to all of this started, Chito never even had any formal training except for assisiting his sister whenever she baked during his childhood days, "That's all the training I got. She's the one who took formal classes. I had some interest in baking but never really thought of making a career out of it. I was always very meticulous and exact. So my mom always asked me to read the instructions of cooking equipment that she bought and to teach our cook how to use it. I guess all these helps me learn some cooking/baking techniques." I suppose it was only a matter of tap before Chito's innate desire to bake was tapped!

            Although there are already so many different versions of apple pie in the market, Chito believes he can make his way through and rise above them all, "It's the people who are looking for the best products and are willing to pay just a little bit more for it. We like to think of ourselves as the "Apple" of apple pies. Apple (Mac) went into the mobile phone business which was already crowded with so many manufacturers. They made an excellent phone which raised the bar so high, that they ended up with no competitors, since no one else was on the same level." That's what we'd like to achieve." I believe this pay is already well on its way to attaining just that and will find itself in the kitchens of all apple-pie enthusiasts! Even those who aren't fans of this fruit-themed dessert will think twice.

           Something to look forward to in the future? Chito Benito's take on Banoffee Pie - I am certain this will become another hit.
